- Prepare the Strawberries:

Once it starts boiling, reduce the heat to low and let it simmer for 15-20 minutes, or until the strawberries break down and the syrup thickens slightly. - Mash the Strawberries:
Use a potato masher or the back of a spoon to mash the strawberries to your preferred consistency. For a smoother syrup, blend the mixture with an immersion blender. - Strain (Optional):
If you prefer a smooth, clear syrup, strain the mixture through a fine mesh sieve or cheesecloth to remove the strawberry solids. - Add Lemon Juice (Optional):
Stir in lemon juice if using. This adds a touch of tartness and balances the sweetness. - Cool:
Let the syrup cool to room temperature. - Store:
Transfer the cooled syrup into a clean jar or bottle and refrigerate. The syrup will keep for up to 2 weeks in the fridge.
